You’ll need a blender for this one but trust us, it will be worth the extra dish washing! These easy to transport, tiny lemon treats contain 2g of protein per piece, and may just become your next favourite snack. The recipe will make about 18 bites in total, so feel free to double it up if you are preparing them for guests or a get-together.

This recipe is for our fans of rich flavours. Traditionally, peanut butter pie is not known for being the healthiest dessert choice, but this take is an improved version of the well-known classic, minus the guilt. You can use any type of sweetener you like, so don’t fret if you’re not a fan of Splenda. Like most glucose-friendly recipes, there are very few ingredients. The hardest part? The two to three hours you’ll have to wait for it to cool in the refrigerator.

Not only is this treat delicious, but it is also beautiful to look at. You will need several small canning jars with lids, and a bit of elbow grease to prepare your strawberries for the filling layer and topping. Although the recipe doesn’t call for a crumb base you can definitely add it (just remember to read nutritional labels on any pie crust base you purchase, and to follow your dietary restrictions).
